Elegant 20-year old sherry vinegar from Jerez, the home of sherry in Southern Spain.
Made from the Palomino (also known as the Jerez), a white grape abundant in the region, it's aged the traditional way, using the Solera method, that is a battery of oak barrels in a very similar process to making balsamic vinegar.
Use sherry vinegar for meat and fish dishes, and dressings and sauces where you're looking for a subtle sweetness that enhances, rather than overpowers other flavours.

The solara method has many uses, and ensures consistent ageing of various products including wine, beer, rum and whisky. It literally means 'on the ground' in Spanish, a reference to the lowest level of wooden barrels in the cellar.
