Salted Ricotta is an Italian cheese made from sheep’s milk whey, which is pressed, salted, formed into a wheel and aged for several months. It has a creamy, mild, nutty flavour and is slightly saltier than regular Ricotta. Firm enough to grate, crumble and slice into salads or use in place of feta.
- Try with watermelon and cucumber for a light refreshing starter
- Crumble into all kinds of salads, especially ones with grains, pulses and pasta.
- Grate it over toast with a drizzle of honey and a good crack of black pepper
- Use as a milder and more versatile alternative to feta cheese – you still get a salty tang but without the pungency.
