Roast Mutton Leg with Wild Garlic and Basil Pesto and Greek Style Potatoes with Lemon and Olives

Graded Beldi olives in a lemon, basil and mint marinade. We crack the olives to allow the aromatics to infuse into the flesh, imparting a refreshing herbal citrus flavour throughout the fruit.
In Greek mythology Minthe was a Nymph from Mount Mintha. Haides was in love with her, but he was already married to Zeus's daughter no less, Persephone, the Goddess of vegetation. On hearing that Minthe claimed to be her superior, Persephone took revenge. She metamorphised her into a small green "sweet smelling" herb. Today we call it mint.
