Miso Harissa Quick Roast Salmon

This is a super special, centrepiece dish that comes together in less than 20 minutes. Miso Harissa has sharp tangy and spicy notes that are perfect for cutting through a rich piece of fish such as salmon, mackerel or tuna. Simply spread the miso harissa sauce on top of a fish fillet, top with other garnishes such as spring onions and pomegranate or sesame seeds, and bake on high heat so that the glaze is charred on top and the fish remains a little pink or just cooked on the inside. The key is to not overcook the salmon, ensuring it is soft and tender on the inside, and full of punchy flavour on the top, to contrast. Serve with grilled vegetables, rice or noodles.

Method
  • Step 0: First clean the salmon, taking care to remove bones and fish scales.
  • Step 1: Pre-heat the oven to 200 degrees fan.
  • Step 2: Skin side down, lay the salmon onto a baking tray
  • Step 3: With a spoon, spread the miso harissa onto the salmon, creating an even layer across the fillet.
  • Step 4: Next sprinkle on spring onions and the pomegranate evenly.
  • Step 5: Bake for 15-20 minutes until the salmon is still a little pink on the inside and charred on the top.
  • Step 6:  Leave the salmon to rest for 5 minutes before serving with roast vegetables, rice or noodles.
