Strawberry and Pomegranate Molasses Eton mess
Don’t overwhip. We would always recommend to underwhip and then finish the last part by hand to get the cream to the right consistency. This dessert is so easy to make yet the enjoyment is so far more than just easy. It’s fun, refreshing and comforting. The pomegranate molasses lends itself so well to the sweet meringues and seasonal strawberries.
900ml double cream
100gr meringues, shop bought
50gr toasted flaked almonds
300gr strawberries, hulled and quartered
80ml Pomegranate Molasses
- Whisk the double cream using the whisking attachment on a mixer, until you reach really soft peaks. Finish off any more whisking by hand if needed.
- Take 4 glasses, spoon 1/8 of the cream, drizzle with 1 tsp of Pomegranate Molasses, crumble some meringes and almonds, place some quartered strawberries and then repeat
- Repeat step 2 for all other 3 glasses
