Sabor by Name, Sabor by Nature
Sabor – meaning flavour in Spanish – is one of the most revered openings of 2019 and, due to popular demand and rave reviews, the restaurant is now open seven days a week having previously been closed on Mondays. To celebrate this news and as part of our Restaurant of the Month series (…and to beat the Monday blues) we’re giving you the opportunity to win a £150 voucher to spend at either Sabor or its upstairs counter-part, El Asador.
The understated Spanish tapas bar on Heddon St in Mayfair was founded by Nieves Barragán Mohacho and José Etura, former executive head chef and group general manager at Barrafina respectively. The duo earned a Michelin star in October and, Sabor was labelled the best Spanish tapas food in Great Britain by restaurant critic Fay Maschler.
Fay also orders (and who are we to argue!) that ‘you have to start with the Pan Con Tomate’ before you begin the regional Spanish journey that heroes dishes from Andalucía, smokey flavours from Asador’s wood fired ovens and an unrivalled offering of Galician seafood.
We began working with Nieves in 2003 when she was cooking at Fino on Charlotte St (now closed), then during her nine-years at Barrafina. Throughout the research and menu development phase of Sabor, Nieves joined us in The Pembury Kitchen to experiment with our Mediterranean flavours and recently came to visit our Spanish suppliers to meet the producer and understand where the ingredients come from.
