Our Balsamico di Modena is made by a third generation producer according to the strict EU laws of Protected Designation of Origin (PDO) and (Indication géographique protégée).

Density is crucial to understanding premium balsamic. As a rule of thumb, the lower the density, the more acidity on the palate. The higher the density, the stickier and sweeter.
