Field-grown tomatoes are harvested ripe, then sized, sliced and salted. They're left to bask on nets in the glorious Puglia sunshine for a few days until their texture changes. The flavour profile changes too, with an increase in both sweetness and umami.
Once they're dried out, they're dropped into hot olive oil, which cooks them gently as it cools. This brings out the sweet flavours, effectively making these tomatoes a confit.
