This is not a special variety but ordinary garlic that is blanched in rolling boiling water for a matter of seconds. The heat is just enough to neutralise the Alliin before it converts to Allicin. Whilst the blanching neutralises the Alliin the length of time for which it is blanched means that the structure of the garlic is hardly affected and retains bite and crunch. The end product contains all the bite of Fresh Garlic but none of the after effects in terms of sulphurous smells. It is often referred to as sweet garlic because once the dominant Allicin flavour has been neutralised the natural sugars in garlic come to the fore.
