Sea Salt & Mignonette Pepper Almonds
The nut mixes were developed by Ross Gibbens (ex-Ollie Dabbou restaurant head chef - our development chef at the time), with the aim to create a product that was better than anything on the market currently. Ross set about coming up with flavour combinations that were not currently available and which could rival the restaurants for inventiveness and quality. The mixes are hand prepared in 35-40kg batches. As a result, it has become very important that the batches are visually checked as well as taste tested, the look of the mixes is almost as important as the flavour...almost. This way the mixes come out looking as though they are hand made…because they are.
