A more recent variety, once called 'Rizotto', San Andrea is becoming more popular today. The grains are small and have a high starch content and this rice is therefore difficult to overcook. Perfect for a creamy risotto, Sant Andrea gives a medium consistency after boiling It belongs to the product group of rices “Fini” and is characterized by a compact and semi-tapered grain, it is the most traditional rice grown in Vercelli area, compared to Carnaroli has a lower firm cooking but it contains a large amount of starch that helps the preparation of creamy dishes and soups.
