Grown by Mario Anfossi in Liguria, a region noted within Italy for the flavour of its basil. In fact, to prove it, Mario has grown potted plants at the furthest corners of Italy to prove a legal case that Ligurian basil does in fact taste different to any other, and earn its status as a product protected from imitations under EU law. The trick with Basil (all fresh produce really) is having a buyer for it when it is ready. All to often a buyer will have leverage over you knowing that, as a grower, you need to sell quickly before it goes off. Mario decided the best way to deal with this was to turn the basil into a paste and capture the freshness and quality asap, giving him more control over its longevity and quality and therefore its price. Usage - - Classic stirred into pasta of most kinds - add to breadcrumbs to coat chicken breast/thighs - Stir through yoghurt and serve with roasted vegetables - loosen with more olive oil and use as a dressing for salad
