Strawberry and Goat's Cheese Crostini with Balsamic Pearls

Balsamic vinegar and strawberries are a winning combination. The tangy and tart flavour of the vinegar perfectly enhances the natural sweetness of the fruit. Try this recipe for a delicate appetizer or light lunch.
Ingredients
6 slices of ciabatta or other italian-style bread, or 8-10 slices baguette
100g soft, mild, creamy goat’s cheese
100g hulled strawberries
1 ½ tablespoons of Balsamic Pearls
Instructions
- Toast the bread either in the toaster for larger slices or under the grill for the smaller pieces until lightly golden.
- Spread generously with goat’s cheese and top with strawberries. Spoon over the balsamic pearls and drizzle over some of the balsamic vinegar from the jar. Serve straight away.
