Rhubarb, Celery and Apple Salad with Apple CIder Vinegar, Mixed Herbs and Toasted Hazelnuts

Rhubarb is coming back in season! We love using this fruit in a variety of our recipes, particularly when it’s at its sweetest and tartest time from late March-June. Try out this fresh salad with Italian radicchio and fresh herbs for the perfect springtime side.

- Step 0: Cover the raisins with water that has just been boiled and leave to sit for 5 minutes. Drain and set aside.
- Step 1: Marinade the rhubarb and apple in 1 tbsp apple cider vinegar each separately for 5 minutes.
- Step 2: Make the dressing by mixing the olive oil and the remaining apple cider vinegar. Season with salt and pepper.
- Step 3: Mix the herbs, celery, rocket, Castelfranco, raisins, rhubarb, and apple.
- Step 4: Pour the dressing over and mix well.
- Step 5: Top with the chopped hazelnuts.
