Rhubarb, Celery and Apple Salad with Apple CIder Vinegar, Mixed Herbs and Toasted Hazelnuts
Rhubarb is coming back in season! We love using this fruit in a variety of our recipes, particularly when it’s at its sweetest and tartest time from late March-June. Try out this fresh salad with Italian radicchio and fresh herbs for the perfect springtime side.
Ingredients
- 50g raisins
- 1 stalk rhubarb (120g), sliced thinly on an angle
- 1 apple, cored and quartered, sliced thinly on an angle
- 60ml extra virgin olive oil
- 30ml apple cider vinegar
- Salt and pepper
- 5g chervil, chopped
- 5g tarragon, chopped
- 5g dill, chopped
- 5g mint, chopped
- 100g celery, sliced thinly on an angle
- 30g wild rocket
- 50g Castelfranco radicchio or endive, torn into large pieces
- 50g toasted hazelnuts, chopped
Instructions
- Cover the raisins with water that has just been boiled and leave to sit for 5 minutes. Drain and set aside.
- Marinade the rhubarb and apple in 1 tbsp apple cider vinegar each separately for 5 minutes.
- Make the dressing by mixing the olive oil and the remaining apple cider vinegar. Season with salt and pepper.
- Mix the herbs, celery, rocket, Castelfranco, raisins, rhubarb, and apple.
- Pour the dressing over and mix well.
- Top with the chopped hazelnuts.
