Rhubarb, Celery and Apple Salad with Apple CIder Vinegar, Mixed Herbs and Toasted Hazelnuts

Method
  • Step 0: Cover the raisins with water that has just been boiled and leave to sit for 5 minutes. Drain and set aside.
  • Step 1: Marinade the rhubarb and apple in 1 tbsp apple cider vinegar each separately for 5 minutes.
  • Step 2: Make the dressing by mixing the olive oil and the remaining apple cider vinegar. Season with salt and pepper.
  • Step 3: Mix the herbs, celery, rocket, Castelfranco, raisins, rhubarb, and apple.
  • Step 4: Pour the dressing over and mix well.
  • Step 5: Top with the chopped hazelnuts.
