Sun dried tomatoes originated from Italy as a way to store fresh tomatoes for use all year round. Fresh tomatoes would be dried in the hot sun on the tile roofs as a way to preserve them for the winter months. Today they are still dried in the sun, but in much larger quantities and under strict quality controls.
Belazu's A grade Sun Dried Tomatoes are special in that they have been sun dried twice, to increase the intensity of their flavour. Don't forget to use the sunflower as a flavoured oil for dressings or marinades afterwards.
